Bacon Cheese Sandwich

🥓 Ingredients
2 slices of bread (brioche or sourdough recommended)
4–6 slices crispy bacon
2–3 slices cheddar cheese
1 ripe avocado
1 tbsp lemon juice
Salt & black pepper (to taste)
Oil for toasting the bread
Fresh chives, finely chopped (for topping)
👩🍳 Instructions
1. Toast the bread
Heat a little oil in a pan and toast both slices of bread until golden and crisp. Set aside.
2. Cook the bacon
Place the bacon in a hot pan and cook until crispy. Transfer to a paper towel to remove excess fat.
3. Prepare the avocado
Mash the avocado with a fork in a small bowl. Add lemon juice, salt, and black pepper. Mix until creamy.
4. Melt the cheddar
In the warm pan, place the cheddar slices and let them melt, or melt the cheddar directly on top of the hot bacon so it turns fully melty.
5. Assemble the sandwich
Spread the mashed avocado onto one slice of toasted bread. Add the crispy bacon. Top with the layer of melted cheddar.
6. Add chives
Sprinkle fresh chopped chives over the cheese for extra flavor and color.
7. Serve
Close the sandwich, cut in half, and enjoy while the cheddar is soft and melty.
